ถ้าหลายคนติดตามเว็บนี้มาเป็นประจำคงจำกันได้นะครับ ว่าผมเคยเขียนเรื่องกระเจี๊ยบไว้ในตอน “กระเจี๊ยบ สมุนไพรสีสดใส รสชาติถูกใจ“แต่กระเจี๊ยบที่ผมพูดถึงในตอนนั้นคือกระเจี๊ยบแดง ซึ่งส่วนใหญ่คนมักจะนำไปเป็นเครื่องดื่ม แต่ยังมีกระเจี๊ยบอีกชนิดหนึ่งที่ผมยังไม่ได้พูดถึงนั่นคือกระเจี๊ยบเขียว นั่นเอง สำหรับกระเจี๊ยบเขียวในบ้านเราจะนิยมนำไปลวกจิ้มกับน้ำพริก เชื่อว่าหลายคนก็คงก็เคยทาน ตามตลาดร้านที่ขายน้ำพริกผักลวกก็มีให้เห็นบ่อยๆ ยังไงก็ลองหาทานกันดูนะครับ เพราะนอกจากรสชาติจะดีแล้ว ยังมีสรรพคุณด้านสมุนไพรอีกมากเลยทีเดียว ก่อนที่จะบอกว่ากระเจี๊ยบเขียวมีสรรพคุณอะไร ขอแนะนำชื่อเสียงเรียงนามและลักษณะของพืชชนิดนี้ก่อนนะครับ
ชื่อทั่วไป กระเจี๊ยบเขียว หรือ Lady ‘ s Finger (แปลตรงตัวคือเล็บมือนางนั่นเอง แต่ต้นเล็บมือนางของไทยเป็นอีกต้นหนึ่งนะครับ)
ชื่อวิทยาศาสตร์ Abelmoschus esculentus Moench.
ชื่อวงศ์ MALVACEAE
ชื่ออื่น กระเจี๊ยบมอญ กระเจี๊ยบ มะเขือมื่น ส้มพม่า มะเขือหวาย มะเขือมอญ มะเขือพม่า มะเขือละโว้ กระต้าด ถั่วเละ กระเจี๊ยบขาว
ลักษณะของกระเจี๊ยบเขียว
- ลำต้น มีขนหยาบและมีความสูงประมาณ 1-2 เมตร
- ใบ ลักษณะใบเป็นใบเดี่ยว คล้ายฝ่ามือเรียงสลับกัน และมีขนหยาบ
- ดอก มีสีเหลือง ที่โคนกลีบด้านในมีสีม่วงออกแดง ออกตามซอกใบ ก้านชูเรณูรวมกันเป็นลักษณะคล้ายหลอด
- ฝัก คล้ายนิ้วมือผู้หญิง (ดังชื่อในภาษาอังกฤษ) ตามฝักมีขนอ่อนๆทั่วฝัก มีสันเป็นเหลี่ยมตามยาว 5 เหลี่ยม ฝักกระเจี๊ยบมีทรงยาวสีเขียว ฝักอ่อนมีรสชาติหวานกรอบอร่อย ส่วนฝักแก่จะมีเนื้อเหนียว
การนำกระเจี๊ยบเขียวไปประกอบอาหาร
กระเจี๊ยบเขียวนอกจากใช้ลวกจิ้มเป็นเครื่องเคียงกับน้ำพริก ยังใช้ปรุงอาหารได้หลายชนิด เช่น แกงส้ม แกงใส่ปลาย่าง สุดแต่จะนำไปประยุกต์ สำหรับคนไม่เคย รับประทาน กระเจี๊ยบเขียว อาจจะรับประทานได้ยากกันสักหน่อย เพราะ ฝักของมัน ข้างในจะมี ยางเมือก ๆ หุ้มเมล็ดอยู่ แต่ทานบ่อยๆจะชินเอง คนสมัยก่อนนิยมเอาไป ต้ม หรือ ต้มราดกะทิสด (การราดกระทิสดบนผักเป็นภูมิปัญญาอย่างหนึ่งในการดึงวิตามินที่ละลายในไขมันได้ให้ออกมาจากผักให้ร่างกายดูดซึมให้ใช้ได้ง่ายยิ่งขึ้น) กระเจี๊ยบเขียวหากกินกับ น้ำพริกกะปิ ปลาทู จะให้รสชาติที่ดีมากๆ ลองทานดูได้นะครับ
สรรพคุณทางด้านสมุนไพรไทย
กระเจี๊ยบเขียว เป็นพืชที่มีคุณสรรพคุณด้านสมุนไพรในการช่วยรักษาโรคกระเพาะอาหารและลำไส้ เพราะในฝักกระเจี๊ยบนั้นมีสารเมือกพวกเพ็กติน (Pectin) และกัม (Gum) ช่วยเคลือบแผลในกระเพาะอาหารและลำไส้ รักษาความดันให้เป็นปกติ เป็นยาบำรุงสมอง มีสรรพคุณเป็นยาระบายและสามารถแก้โรคพยาธิตัวจี๊ดได้ด้วย แต่ต้องรับประทานติดต่อกันเป็นเวลาอย่างน้อย15วัน(แต่ข้อนี้ผมแนะนำให้ใช้ยาแผนปัจจุบันมากกว่า)
นอกจากนั้นยังมีสูตรการทานกระเจี๊ยบเขียวเป็นยาสมุนไพรต่างๆดังนี้
