จากที่เคยเขียนเรื่อง สูตรสมุนไพรไทยบำรุงสายตา จากผักบุ้งไปแล้วนั้น วันนี้เลยจะขอเจาะลึกถึงพืชชนิดนี้ เพราะนอกจากสรรพคุณในด้านการบำรุงสายตาแล้วผักบุ้งยังมีประโยชน์ด้านอื่นๆอีกมาก แน่นอนครับ เราไม่เน้นที่ผักบุ้งจีน แต่เราเน้นที่ผักบุ้งนา หรือผักบุ้งแดง ที่พบได้ตามริมรั้วโดยทั่วไป

ชื่ออื่นๆของผักบุ้ง : ผักทอดยอด(ตามที่อ.ภาษาไทยสอนแต่ทำไมไม่ค่อยมีคนใช้คำนี้เช่น แม่ค้าเอาผักทอดยอดกำนึง ) , ผักบุ้งแดง, ผักบุ้งไทย, ผักบุ้งนา

วงศ์ของพืช : CONVOLVULACEAE
ลักษณะทั่วไป :
ผักบุ้งเป็นพืชน้ำ และเป็นพืชล้มลุก ลำต้นเลือยทอดไปตามน้ำหรือดิน ทีชื้นแฉะ
ต้น : มีเนื้ออ่อนลำต้นจะกลวงและมีปล้อง เป็นสีเขียว หรืออาจเป็นสีน้ำตาลแดง
ใบ : มีสีเขียวเข้ม เป็นรูปสามเหลี่ยมมุมแหลมคล้ายหอก เป็นไม้ใบเดี่ยวออกสลับทิศทางกันตามข้อต้น ใบยาว 4-8 เซนติเมตร
ดอก : ลักษณะ ของดอกเป็นรูประฆัง มีสีขาว หรือม่วงอ่อน ด้านโคนดอกสีจะเข้มกว่าด้านนอก ดอกบานเต็มที่ประมาณ 3-5 เซนติเมตร ออกดอกตลอดปีในช่วงฤดูร้อนจะออกมากหน่อย
ประโยชน์ทางด้านสมุนไพรไทยของผักบุ้ง
ใบผักบุ้ง ผักบุ้งนั้นตามตำราสมุนไพรไทยเขาว่ามีรสเย็นจืด สรรพคุณคือถอนพิษเบื่อเมา รากมีรสจืดเฝื่อน มีสรรพคุณถอนพิษผิดสำแดง อาหารเป็นพิษ
ดอกผักบุ้ง เฉพาะดอกตูมใช้รักษาโรคผิวหนังเช่น กลากเกลื้อน หรืออาจใช้ตำพอกรักษาโรคริดสีดวงทวาร
สารอาหารที่พบได้ในผักบุ้ง
ในผักบุ้งมีสารอาหารหลายชนิด ที่เป็นจุดเด่นของผักบุ้งเลยคือ วิตามินเอ ที่มีมากถึง 11447 IU* ซึ่งช่วยในการมองเห็น
(*IU ย่อมาจาก international unit เป็นหน่วยสากล เฉพาะวิตามินเอ หนึ่ง IU เท่ากับ 0.3 ไมโครกรัม เรตินอลหรือ 0.6 ไมโครกรัมของเบต้าแครอทีน)
นอกจากนั้นยังมี เส้นใย ซึ่งช่วยในระบบขับถ่าย แคลเซียม บำรุงกระดูกและฟัน ฟอสฟอรัส วิตามินบี 2 และวิตามินซี
